This recipe is essentially semi-homemade. But shhh -we won’t tell! This bread is one of those staple baking recipes you’ll want to have on hand or on the back of your pantry door.

With just a few added ingredients, you can turn a simple boxed mix into an impressive, moist type of bread that is rich, buttery, and hearty tasting.

Ingredients:

  • 2 boxes of Jiffy Corn Muffin Mix
  • Eggs
  • Vegetable oil
  • Sour cream or buttermilk (I usually use sour cream but buttermilk will also work)
  • 2% Milk
  • Sugar (optional)

Instructions:

  1. Start by adding the Jiffy cornbread box mix to a mixing bowl. 
  2. Add the sour cream or buttermilk, eggs, milk, and oil. Mix everything together until well combined.
  3. Lastly, bake the cornbread for 20-30 minutes. Once it’s done, enjoy your wonderfully moist and delicious cornbread!

If you’ve ever wondered how to get a different flavor added to your cornbread or how to make it more moist – I have a few techniques to share here.

The quickest and easiest way to make this cornbread moister is by adding some sour cream and eggs to the basic mix.

That is pretty much it! This way, the bread will not become hard, dry, or brittle.

 If you’re anything like me, I love making my cornbread have just a pinch of a sweeter taste. But there’s also a plethora of other cornbread flavors to try out.

I find that sweeter cornbread pairs well with savory toppings such as honey, butter, apple butter, an assortment of jams, or even a side of homemade chili (check out my family’s favorite slow cooker white chicken chili!)

To achieve a sweeter cornbread flavor, I use a little bit of granulated sugar or brown sugar in the basic mix with the additional sour cream, eggs, and oil. Mmm mmm mmm!

I’m pretty sure I will be making this now once I finish writing this recipe out because it’s so heavenly tasting.

(Also, perhaps I’m just hungry now) LOL.

If you prefer, you can totally leave the sugar out of the recipe. It’s still just as tasty without it. Cornbread is one of my favorite comfort foods and this recipe is the perfect way to enjoy it.

Sometimes, I even like to add a scoop or two of vanilla bean ice cream or strawberry ice cream and serve this cornbread as a delightful and unique dessert.

Also – if you want a thicker cornbread I suggest adding more boxes of mix. I do this every time I make it.

Even if I’m serving it to only 4 people I opt to make this recipe with two boxes of the mix instead of just one. Keep this in mind if you want a thicker and fuller tasting/looking cornbread!

Moist, Sweet, and Thick Semi-Homemade Cornbread Instructions:

  1. Add 2 boxes Jiffy Corn Muffin mix into a large mixing bowl. (If you use one box, just use half of the ingredient measurements here).
  2. Second, add 2 eggs in the mixing bowl with the corn muffin mix. 1 egg per box of mix is a good rule of thumb.
  3. Add 2% milk. Buttermilk or whole milk also yields moist cornbread.
  4. Next, add the sour cream. This will give the recipe a creamy texture and taste without it tasting tart.
  5. Add vegetable oil.
  6. Add 1-2 tablespoons of granulated sugar. (This is optional) but as stated above, the sugar will make the cornbread have a sweeter and richer taste. This part is completely your preference!
  7. Mix all components together and pour the mixture into a baking dish.
  8. Bake in the oven for 25-35 minutes. The cornbread will have a ‘cake’ appearance while it’s baking and after removing it from the oven. To test if the mix is baked thoroughly, add a tooth down the center of the bread and pull out – if none of the batter/mix is on the toothpick, it’s fully cooked!

After making this cornbread I quickly noticed it was even more adored with those simple added ingredients. Even more so than the times I’ve made it just the regular mix and nothing added at all.

It’s delicious without butter – and I LOVE butter with bread. That’s how amazing this recipe is.

Something I have not tried yet is baking a cornbread recipe in a cast iron skillet. Though, I’ve heard cornbread made this way is epic and it makes the cornbread have more of a crust when butter is added to the skillet.

Trust me, whichever way you choose to make it, I can assure you it will be nothing less than a hit!

How Can I Reheat Cornbread?

 

Reheating cornbread is easy! In fact, you can do it a few different ways.

If you reheat cornbread in the oven, turn the oven to 350 degrees. Cover the cornbread with aluminum foil so the top doesn’t burn or over-bake. Bake for about 10 minutes. Once you remove it from the oven, top it with butter to keep it moist. Your cornbread will taste just as fresh as the day you initially made it!

The second way to reheat cornbread is in the microwave. If you’re in a hurry, this method is the way to go. Just make sure to cover it with a paper towel to prevent it from drying out.

For best results, heat for 30 seconds per piece.
